Sweet Potato Pancakes ~ Easy Recipe

Here's my super simple sweet potato pancake recipe. It's not fancy, but it's always a crowd pleaser.

Perfect for even the pickiest eaters and a warm side dish on chilly evenings.

Today I had a "Oops" moment, that turned into a wonderful 'Oh my!" I love it when that happens!

I started roasting a chicken for dinner and decided that it would be yummy to make sweet potato fries as one of the side dishes.

Well, I have never made sweet potato fries before and when I tried to cut them up, I made a mess.
They were not the proper shape or size and I was really hurting my hand with my sad attempt at slicing.

Cooking is not really my thing, I do it because I have to, but I really don't have any fancy tools.

I'm used to cooking things like rice.

Of course, I do have the the essentials, so I pulled my grater out of the cabinet, tried to remember my mom's old potato pancake recipes for inspiration and started shredding.

Update: Now I have a fabulous tool that does this automatically for me...but I digress.

I have to say that it was one of the best recipe fails I've ever had, because everyone loved the end result.

No one missed the fries.

Even the pickiest among us was asking for seconds...and thirds...and remember, we're talking vegetables here people!

We are basic eaters here at Exquisitely Unremarkable, nothing too spicy or too fancy is ever on the menu. Which means the recipe is super simple.

And there's room for you to embellish it any way you like.

Over the years, I've looked at many other sweet potato pancake recipes, thinking about jazzing our menu up, but eventually just settled on this, as it worked all for us.

They're delish, with sweet potato being the most dominant flavor.

Here's what I did:


Super Simple Sweet Potato Recipe


3 large sweet potatoes
3-4 tablespoons of flour
1 egg
A few sprinkles of minced onion flakes
A dash of salt

Peel and shred potatoes, add all other ingredients and mix well.

Form into small pancakes and fry in a tiny coating of oil for 4 minutes each side...less if you like them less crispy.

Remove and place them on paper towel for a bit...then eat!!

They were so good straight up, we didn't dip them in syrup or sour cream.

But you could.

They were honestly so yummy, we didn't even wait for the chicken to dig in!

So technically I guess they weren't a side dish. Which lead to my next point, that they would also make great appetizers.

It'd been a long time since I had these.

They were a favorite around the house when I was little and I'm so glad that my inept chopping skills led me down this path.

Now have a new super simple, simply scrumptious side dish.

That even I can make!

  1. These look great. I will have to try making them. My mom and I are great potato pancake fans and last summer I made some zucchini pancakes which were also very good. Thanks for sharing the recipe.

  15. try this lazy recipe. peel and slice sweet potatoes place on a cookie sheet like they are cookies, sprinkle with olive oil and bake at 400 for 25 minutes or so depending on how thick the slices are. test for doneness and serve.
