Simple KitchenAid Vanilla Ice Cream Recipe

Whip up a batch of delicious homemade vanilla ice cream easily at home with a KitchenAid Ice Cream Maker attachment and this simple recipe.

I've always been a huge fan of ice cream.

I like it in all forms. Hidden in a cake, plopped on a cone or stuck inside a sandwich.

However, my favorite way to enjoy it, is in a bowl.

Savoring one slow spoonful at time. Mmmmm.

Unfortunately, over the past year, it started to bug my stomach. I have no idea why, really.

It wasn't the milk, I drank that all the time.

And I usually bought vanilla, so it wasn't the fruit or nuts.

Eventually, after trying too many brands to count, I realized that all of them, including Breyers, used some kind of gum and included "natural flavors" which is a catchall term that can't be quantified. Bummer.

Then one magical day, my friend Carla posted her recipe for Strawberry Waffle Cone Ice Cream and I thought that maybe that was the answer. Homemade ice cream. 

I could control what I put in it and it would certainly be healthier.

So I reached out and and asked her what kind of ice cream maker she used for the recipe.

Turns out she had a KitchenAid ice cream attachment (<--this one) which was fabulous to hear, since I had a KitchenAid mixer!

We'd given it to my daughter as a late Christmas gift.

I'd found the mixer for a crazy good price(<--this one), but it was never in stock, so I waited until it became available in January.

And it was such a good investment.

It's a 4.5 quart, which is smaller than what I've seen around, but more than sufficient for our simple dessert recipe needs. 

I don't think that a day has gone by that it hasn't been used. 

So investing in the ice cream attachment was a no brainer. 

Once it arrived, I just had to find a decent vanilla ice cream recipe, without eggs

Now, there are a ton of them out there, but like I said, we're simple folks when it comes to food.

So we experimented with our own, one that uses 2% milk rather than whole and less vanilla than most call for and it's become our go to.

And guess what? 

No more ice cream stomachaches. 

How fabulous.

How To Make No Egg Vanilla Ice Cream With A KitchenAid Mixer


Ingredients:


1/4 teaspoon of salt
1 cup of sugar
1/2 tablespoon pure vanilla extract
2 cups heavy cream
2 cups 2% milk

Now, the one thing I must warn, is that while the ice cream itself may be super simple to make, there's a lot of waiting around in the process. 

For example, step one requires that the day before you gather your ingredients, you need to put your ice cream attachment bowl into the freezer.

For about 15 hours. Yup. Fifteen.

This is definitely not a Gee, I think I'll have some ice cream now kind of recipe. You need a plan. 

We usually put the bowl in the freezer the night before. 

Then, the next morning, we get started with the good stuff.

In a glass mixing bowl, we stir or whisk all of the ingredients together well, until the salt and sugar have dissolved.

Next, we cover the bowl and place it in the refrigerator for a few more hours, until it's completely chilled.  

More waiting. 

Once we're ready to churn, we take the mixture out of the fridge and pour it into the frozen KitchenAid bowl, which has been removed from the freezer and attached to the mixer with all its pieces.

We start the mixer, pour the ice cream batter inside and let the machine do its magic for about 20-30 minutes.

When the ice cream looks done, we scoop it out of the attachment bowl, place it in another bowl and cover it, for one last trip to the freezer.

For another 2-3 hours. While we wait some more.

I told you, lots of waiting.

But when it's done, it's SO worth it. 

The ice cream is fresh, cool and very, very delicious.

You can eat it alone or top it with anything you like.

You can even add a hard shell of chocolate to it, with this quick recipe.

Or you can eat it like I do.

One slow spoonful at a time.

Every time you walk by the freezer.

Until it disappears.

Shhh....😉

Simple KitchenAid Mixer Vanilla Ice Cream Recipe

Ingredients

Vanilla Ice Cream
  • 1/4 teaspoon of salt
  • 1 cup of sugar
  • 1/2 tablespoon pure vanilla extract
  • 2 cups heavy cream
  • 2 cups 2% milk

Instructions

  1. Freeze mixer bowl for 15 hours ahead of time
  2. In a glass blow, mix all ingredients together well, cover
  3. Place in the refrigerator for 2 hours until chilled
  4. Add ice cream batter to mixing bowl and churn for 20-30 minutes according to KitchenAid Ice Cream Maker Attachment instructions
  5. Put ice cream into another bowl, cover and freeze again for 2-3 hours
  6. Serve

Notes:

You can top your ice cream with a variety of fruit, nuts or chocolate.

You can also pop it on top of pie.

  1. Sounds like in the end all the patience and hours of prep pay off. I am the same way with ice cream lately. I drink tons of milk and never have an issue so maybe it is the heavy cream in ice cream that is too much. Glad you could make your recipe with 2%. Happy Friday. xoxo Kris

  2. Looks good to me, and I have a kitchen aid mixer :^) I will petition Santa Claus for the attachment!!
    Now, to find a sugar free (except for the berries) strawberry/vanilla recipe.......hmmmmmmmmm.

    1. It's a dangerous little attachment, J. The only good thing is that it does take a while to freeze and prep so I can't eat it 24/7...which I would. I have also seen sugar free recipes, so you're in luck. Or not. Haha!

    2. I made some triple chocolate ice cream (recipe in the kitchen aid maker book)with no sugar. I used Julian Bakery Monk fruit. Only one heaping tablespoon. It was super good!!

  8. I have the same mixer in black - and I got mine for a good deal too.
    I'm not an ice cream eater though. I would never eat it plain, and even when we go out for ice cream, I usually end up getting something else. I do have a pampered chef ice cream maker, that Bob and the grand kids enjoy.

    I sure do love ice cream and it is one of my weaknesses.....Sorry that I have not been by sooner but I am on a mission to have the entire house decorated by Thanksgiving Day.... I want to sit back and relax and enjoy the Holiday season. We will also have our Grand Pup for 5 days while my son and DIL are away on vacation so I want to be able to devote that time to keeping an eye on her!! LOL!! Thanks so much for stopping by!!   10. Kim, oh my goodness this sounds so good. I have the Kitchen Aid mixer but not the ice cream attachments. I have been so good putting my spoon down for awhile. I am being good and waiting until my next doc appt to see where my sugar counts are. If they are good, I will just have to treat myself once in awhile and this sounds like a good way to go..Happy Sunday..xxoJudy

  12. I purchased the attachment several weeks ago. I pinned this recipe a few weeks ago. I remembered last night to pick up whipping cream. I made this today and it was delicious! I love a good ice cream and I’m very picky about my ice cream. I don’t eat it randomly. I have specific places that I will go out of my way to stop at just for good ice cream.

  15. Hi! I tried this and unfortunately it didn’t work at all. After 90 minutes of stirring it was still completely liquid. I googled a bunch of troubleshooting things. My bowl was definitely frozen enough (had been in freezer for multiple days and could hear it slosh inside the bowl prior to freezing and couldn’t hear it sloshing once frozen). I had chilled premixed ingredients. I used on “stir” only. I had a similar problem last time I made a different ice cream recipes but it at least got slushy last time. Any tips? Thanks!

    1. Hmmm. I'm so sorry that happened to you. It sounds very frustrating. The only thing I can think of is maybe it has to do with the milk fat content? We've made it with whole milk, skim and 2% and never had an issue, but sometimes the lower fat milk does take longer to set. Perhaps that's the issue? I hope you can make it work.
